Ottobratico Extra Virgin Olive Oil
Bright golden green. Enhanced by aromatic notes of mint and sage, with a hint of yellow tomato and freshly cut chicory. On the palate, it reveals a delicate sensation of toasted hazelnut and ripe eggplant, followed by a spicy touch of turmeric that envelops the oil’s finish.
Sinopolese Extra Virgin Olive Oil
It appears green with golden hues. The aroma is fresh, reminiscent of freshly mown grass and Treviso radicchio. On the palate, it is enveloping and highly vegetal, with a slight bitterness resembling artichoke and spinach. Surprisingly, there is a pleasant hint of ginger spice on the finish.
Ottobratico Extra Virgin Olive Oil
Our Ottobratico monovarietal is a medium-fruity oil with a balanced flavor profile and the right amount of bitterness and spiciness that don’t overpower the dish. We recommend using it with traditional Mediterranean dishes. Its balance makes it suitable for fresh vegetable dishes like velvety soups and hearty minestrone. It pairs well with grilled fish and seafood, as well as delicate white and red meats.
Sinopolese Extra Virgin Olive Oil
Our Sinopolese monovarietal extra virgin olive oil is a light-fruity oil with a delicate flavor. Its gentle notes lean towards sweetness with a subtle hint of spiciness. It’s an ideal choice for preparing dishes for children. We recommend using it with delicately flavored dishes such as white meats like rabbit and chicken. It’s also great for dressing green salads like lettuce and valerian, steamed fish, fish fry, seafood salads, pumpkin risottos, and preparing basil pesto.

DEGUSTAZIONE: Verde oro lucente. Impreziosito da note aromatiche di mentuccia e salvia, con un ricordo di pomodorino giallo e cicoria appena tagliata. In bocca compare prima una sensazione delicata di nocciola tostata e melanzana matura, poi un tocco speziato di curcuma che avvolge il finale dell’olio.
ABBINAMENTI: Il nostro monocultivar di ottobratica è un fruttato medio dal gusto equilibrato, la giusta dose di amaro e piccante che non sovrastano il gusto del piatto, noi lo consigliamo con piatti della tradizione mediterranea, il suo equilibrio lo rende adatto a piatti di verdure fresche, come vellutate, ma anche minestroni, sul pesce, in particolare il pesce grigliato ma anche sui crostacei, è ideale su carni bianche e rosse delicate.
DEGUSTAZIONE: Alla vista si presenta colore verde con sfumature oro. Al naso è fresco con un ricordo di note vegetali di erba appena falciate e radicchio trevigiano. In bocca è avvolgente e si conferma molto vegetale con un sentore amaro come di cardo e spinaci. In chiusura, stupisce un accenno speziato di zenzero molto gradevole.
ABBINAMENTI: Il nostro olio extra vergine di oliva monocultivar di sinopolese è un fruttato leggero dal gusto delicato, grazie alle sue note delicate tendenti al dolce con un piccante poco pronunciato è ideale nella preparazione dei piatti destinati ai bambini. Noi lo consigliamo su piatti dal gusto delicato, come carni bianche quali coniglio, pollo, ma anche su insalate verdi tipo lattuga e valeriana, ideale su pesce al vapore ma anche per fritture di pesce e insalate con frutti di mare, risotti alla zucca e per la preparazione di pesto al basilico.
